Homemade Elderflower Vinegar

A fragrant vinegar infused with elderflowers and Balsamico Bianco. With just two ingredients and a little patience, it turns into an aromatic, floral vinegar that's perfect for dressings, sauces and more.

Ingredients
  

  • 12 umbels elderflowers fully open
  • 500 ml Balsamico Bianco

Equipment

  • 1 Large glass jar
  • 1 Fine sieve or muslin cloth
  • 1 Bottle for storage

Method
 

  1. When picking the elderflowers, make sure the umbels are free from insects. Discard any affected umbels.
  2. Do not wash the umbels, as this will cause the pollen to be lost.
  3. Remove the thick green stalks, leaving the thin flower stalks attached to the blossoms.
  4. Place the flowers in a large, clean glass container.
  5. Pour the Balsamico Bianco over the flowers whilst cold; there is no need to heat it. The maceration will start regardless.
  6. Seal the container and leave to infuse in a dark place at room temperature for 3 weeks up to 6 months. The longer the infusion time, the more intense the flavour.
  7. Strain the vinegar through a fine sieve or muslin cloth and pour into a clean bottle. Store in a cool, dark place.

Notes

Der Holunderblüten-Essig schmeckt hervorragend in Salatdressings oder als Verfeinerung für Saucen. Er verleiht Gerichten eine leicht blumige, sommerliche Note.
Die Holunderblüten sollten an einem trockenen, sonnigen Tag gesammelt werden, wenn sie voll erblüht sind.
