Why always chicken or turkey? Why not try capon? The wings lean towards game, but only slightly. It has very strong meat, and you can use the leftovers to conjure up a delicious broth. So get started, it’s really quite simple.
Ingredients
- 2.3 kg capon
- 3 organic lemons
- 200 g butter
- Salt
Preparation
Season generously inside and out. Stuff the capon with lemon pieces. Carefully
remove a large knob of butter from the breast and place it between the breast and the skin. Place on its back on the baking tray.
If you are using a meat thermometer, which I find easiest, the core temperature should be at least 80 degrees. Cooking time: 30 minutes. You can also calculate the baking time as 30 minutes per 500 grams at 180 degrees (calculation includes filling).
2 hours 30 minutes in the oven at 180 to 200 degrees on the bottom two shelves.
